mayo cobbler

I had a major craving for something cobbler-y or fruit crisp-y the other night. Problem: most of these things take way too long and involve too much effort. (In Joann-ese, this means I was hungry but was watching a kdrama.) Off to allrecipes.com which is my handy dandy recipedia of stuff. I came across this recipe but was a little scared. I mean, who puts MAYO with blueberries? Apparently, me.

Ingredients (altered slightly)

  • 2 cups frozen blueberries
  • 2 cups frozen cherries
  • 1 cup all purpose flour
  • 3/4 cup of sugar
  • 1/2 tsp of ground cinnamon
  • 1/2 cup of light mayo

What to do:

  1. Preheat the oven to 350 degrees.
  2. Dump the berries into a baking dish. I used a 9 inch pan silicon bake pan.
  3. In a bowl mix together the dry ingredients.
  4. Add the mayo to the dry ingredients. Mix until you get a nice crumbly texture. See above.
  5. Dump the crumblies on top of the berries.
  6. Stick in the oven for 40 minutes (about 3/4 of 1 kdrama episode).
  7. Will smell and taste delicious.

On a side/completely unrelated note I went to capoeira today. Nice people, fun experience. Bonus points for free bowl of soondubu chigae post-cartwheeling. Sorry, back to the berries. Not the best picture, but you get the idea. No worries, you can’t taste the mayo.
